Jeanne Holt is a finalist in the Minnesota Cultivated Wild Rice Council’s 2016 “Get Wild with Wild Rice” recipe contest with her Italian Wild Rice Quesadillas.

Holt said she enjoys cooking and creating new recipes, so she thought it would be fun to create a new wild rice recipe for the contest

The Mendota Heights resident was a finalist in last year’s contest as well with her “Wild Rice North Woods Nachos” recipe.

She often uses wild rice in soups and pilafs. Holt said she enjoys the flavor and texture wild rice brings to dishes, and she appreciates that it’s rich in protein and fiber.

Holt thought the fusion of Italian and Mexican foods would be interesting and work nicely with wild rice.

Besides creating new recipes, Holt enjoys baking, sewing, gardening and photography.

Voting for the eight finalist recipes is open until Sept. 30 at www.mnwildrice.org.
